Menorca is mainly known for being a paradise of virgin beaches and for its traditional fiestas, but our island also attracts the tourists for its incredible gastronomy. Some of the most popular products are the Menorcan cheeses with their distinctive salty flavour, fishes from the area like the red scorpionfish, the skate fish, and the marvellous Sobrasada.
You will find all of these products and more in the restaurant of Binissaida, whose creative chefs Ses Forquilles prepare the market and Menorcan cuisine that characterises our hotel.
What makes our hotel so different from the rest of the hotels in Menorca is the origin of the products we use, because they originate in significant part from our finca, and are entirely natural and autochthonous. Since ten years ago our farmer Juan Carlos with his assistant Llorenç, take care of all the finca, the vegetable garden, the animals, the poultry and the wild olives.
The advantages of having our own poultry and vegetable garden
Sant Joan de Binissaida follows a sustainable ethic and is responsible for the environment. We’re currently growing seasonal products of high quality like zucchinis, tomatoes, aubergines and melons in our organic garden. Thanks to our poultry with hens and turkeys, and our flock of sheep we can offer our clients eggs and suckling lamb that turn our dishes into an exceptional gastronomic experience.
Having a poultry and vegetable garden allows us to offer our clients' natural products of high quality. Which makes them feel safe when eating our products because they know where all of the ingredients they are savouring come from.
In addition, we have five plots of olives, one patch with the Arbequina olive, three patches with the Koroneiki olives, and one patch with the coupage which we use to produce two types of oil. The koroneiki oil and the coupage oil which is a mix of fifteen olive varieties.
Another thing that makes our hotel unique is the green and ecologic filter we use in Binissaida. It’s a wastewater collection system that canalises, filters and cleans the water of the hotel naturally so we can use it afterwards for the vegetable garden.
Try our dishes
If you come to eat to Binissaida, we recommend starting the evening with the grilled lettuce hearts with “Pico de Gallo” from our vegetable garden, followed by our home-grown suckling lamb shoulder at low temperature with mashed potatoes for the lovers of meat. Or try the Menorcan’s Skate stew with beans from Sant Pau if you're looking for a dish with Mediterranean flavour. You can finish with a sweet dessert with our strawberry “Petit Suisse”, or something more salty with our assortment of Menorcan cheeses.
But if you have more time, you can’t miss the Menu of the Finca, a tasting menu that invites to wander around the finca, walking through our vegetable garden, the poultry, stables and olive patches. For the ones interested, there’s a path that goes to the Cala de Sant Esteve, before or after trying our products and enjoying our gastronomy.
